Boil lentils till soft (about 30-40 minutes). Add more water if necessary. Put in vegetalbe stock after the lentils soften or the beans will be hard. Add celery and carrots and any other vegetables such as a potato that you like. Season and that's it!

Lentils can be puchased from your store or natural foods store. There are white (or green) and black lentils. I personally like the black ones. This recipe originally came from my friend, Kenji Matsuoka of Santa Maria.

Walnuts Red Wine Bread

Ingredients:
All purpose flour, 2 cups
Organic Whole wheat flour, 2cups
Dry yeast, 1 package or 1/2 tablespoon (7g)
Warm water, 1 1/4 cups
Salt, 1 teaspoon
Organic Brown Sugar, 2 tablespoons
Olive Oil, 3 tablespoons
Walnuts, 1/2 cup
Raisins with red wine, approximately 1/2 cup

Preparation:
Immerse raisins in red wine over night or more.

Directions:
In a mixing bowl, combine all purpose flour, whole wheat flour, walnuts, raisins with red wine, salt and brown sugar, and mix them with the machine or by hands.

Mix warm water (about 100 degrees) into a larger bowl, and wait for a few minutes. Then, pour it slowly into the mixing bowl while machine is kneading the dough. Keep kneading for 5-10 minutes. Then, let the dough rise for one hour in a warm place. If a room is not warm, I usually leave longer hours such as 3 or 4 hours. If you prepare it previous night, it will be ready the next morning.

To shape the dough, turn the dough out onto a lightly floured surface. Cut the dough into 2 or 3 separate pieces, and shape them into loaves. Let these loaves rise in a warm place again for 30 minutes.

Spray water on the surface of each loaf and bake in a 375-400 degree oven for about 30 minutes until the surface becomes brown.

Vegan Blueberry Muffin

Preparation for about 20 muffins

Ingredients A:

2 cups all purpose flour

1 cup organic whole wheat flour

4 tablespoons baking power

2 banana Cut into quarters, cutting lengthwise. Then chop the quarters

vertically into small pieces (about the same size as the blueberries).

1 & 1/2 cups frozen blueberries

Ingredients B:

1/2 teaspoon salt

3 teaspoons of Egg Replacer with 4 tablespoons of warm water (mix and beat them)

1/2 cup Splenda (sugar substitute) or sugar

2 cups of soy or rice milk

1/2 cup vegetable oil

Mix ingredients A and B separately and then put them together and mix again.

Grease 1 or more muffin pans, enough for 15 muffins, or place 12 baking cups in

a muffin pan or pans. Spoon ingredients into muffin cups, filling each almost full. Bake in

a 400 degrees oven between 30 and 40 minutes or till golden. Cool down to room

temperature and then serve.

You can buy Egg Replacer at any Wholefoods store. Its ingredients are mainly

potato starch and tapioca flour. It costs about $5.00, and I think it equates to about

80 or 90 eggs.

Tabouleh salad

Ingredients:

Serves about 8
3/4 cup bulgur wheat (also known as burghul)
6 scallions or green onions
2 tablespoons mint
1/4 cup parsley
1/4 fresh lemon juice
2 tomatoes
1/3 cup olive oil
1/4 cup raisins or less
Salt and paper to taste

1.
