Lentil Soup


Ingredients:
Lentils 8 ounces or 275 grams
Water 6-7 cups
Vegetable stock 2-14 ounces cans
Celery 2 stalks
Carrots 1
Wash lentil. Boil lentils till soft (about 30-40 minutes). Add more water if necessary. Put in vegetalbe stock after the lentils soften or the beans will be hard. Add celery and carrots and any other vegetables such as a potato that you like. Season and that's it!
Lentils can be puchased from your store or natural foods store. There are white (or green) and black lentils. I personally like the black ones. This recipe originally came from my friend, Kenji Matsuoka of Santa Maria.
