Tabouleh salad


Ingredients:

Serves about 8
3/4 cup bulgur wheat (also known as burghul)
6 scallions or green onions
2 tablespoons mint
1/4 cup parsley
1/4 fresh lemon juice
2 tomatoes
1/3 cup olive oil
1/4 cup raisins or less
Salt and paper to taste

1. Soak bulgur wheat for 20 or 30 minutes in water, and then discard the water.
2. Cut scallions, parsley and mint finely.
3. Mixed the above with lemon juice salt and paper.
4. Leave it in the refrigerator for at least 2 hours.
5. Before serving, mix diced tomatoes, olive oil and raisins into the salad. Chill
it again for a little while before you serve it.

Adding raisins is Fujiko’s friend’s own idea. The sweetness of the raisins matches

this tabouleh salad and makes it more enjoyable for my children to eat.
